INGREDIENTS
For the Banana Cake
½ Cup Vegetable Oil
1 Cup Brown Sugar
1 Egg
1 Tsp Vanilla Extract
1 Cup Flour
1 Cup Ground Biscuits (in food processor)
1 Cup Yoghurt
1 Cup Mashed Bananas
1 Cup Caramelized Walnuts (Recipe below)
1 Cup Chocolate Chips
1 Tsp Baking Powder
1/2 Tsp Baking Soda
2 Tsp Ground Cinnamon
Pinch of Himalayan Pink Salt
For the Caramelized Walnuts
1 Cup Walnuts
2 Tbsp Honey
1 Tbsp Vegetable Oil
PREPARATION

For the Banana Cake
1. Pre-heat oven to 180c degrees.
2. In a bowl mix dry ingredients together combining the flour, ground biscuits, baking powder, baking soda, Cinnamon, and Himalayan Pink Salt. Set aside.3. In a bowl, mix the sugar with the egg until pale. Add vanilla extract, oil, yogourt and mashed bananas. Mix well until smooth.
4. Add dry ingredients to wet ingredients. Stir well until combined.
5. Brush an English cake pan with a little oil and some flour.
6. Pour the cake batter in the cake pan. Top with caramelized walnuts and chocolate chips.
7. Bake in oven for 45 min. Once done, you may garnish the cake with more caramelized walnuts and chocolate chips. Enjoy!
